EGGPLANT DIP




You want your kids to eat eggplant, here is a simple yet very tasty recipe and best of all childproof.
Here are the ingredients:
-2 big fresh eggplants
-1 can tomato sauce
-2 tablespoons of olive oil
-1/2 teaspoon of garlic powder
-1/2 teaspoon of salt
-1 tablespoon of vinegar
-1 tablespoon of chopped FRESH parsley
-1 tablespoon of chopped FRESH cilantro


1-Peel the eggplants, living few strips of skin (alternate).
2-Dice the eggplants, then put them in a deep non stick pot after you heat the oil.
3-Add the vinegar, the salt and the garlic , then let everything simmer (low heat) cover the pot.
4-Add tomato sauce when the eggplants become mushy
5-Leave the pot uncovered ( high heat), stir from time to time, add the herbs .
6-when it starts sticking to the bottom of the pot you are done.






The best thing about this recipe, is you can eat the eggplant hot or cold, you can have it as a side with rice , you can eat it on a slice of fresh bread with some cheese on top, or the kids favorite you can eat it as a dip with pita ships . You can keep it in the refrigerator for a week of course if it survives .
